Coconut Bacon
This delicious crunchy, sweet, salty and smokey coconut is delicious with both sweet and savoury dishes! Have with pancakes and maple syrup with fruit and yoghurt or sprinkle on pasta or baked potatoes.
2 cups coconut flakes
2 tbsp tamari
1 tbsp liquid smoke
1/2 tbsp coconut sugar or maple sugar
1/2 tbsp maple syrup
1/4 tsp chilli flakes
1 tbsp sesame oil
Pre heat the over to 160C. Mix all the ingredients together except the coconut. Then in a large bowl add the coconut and liquid mix and coat evenly. Place on a lined baking tray evenly spread accross. Toss every 5 mins until dark and golden. Leave to cool on baking tray. Keep a very close eye on it as it can burn easily. It will crisp up when it cools.
