Creamy Pesto Hummus
This creamy pesto style hummus dip is a protein and fibre-rich snack that also packs in the flavour. You can also use this as a pasta sauce or on the side of salads.
- 1/2 cup cooked chickpeas
- 1/2 bunch basil
- 1 heaped tbsp tahini
- 2 heaped tbsp nutritional yeast
- 1/4 cup pine nuts
- 1/2 lemon juiced
- 1 tsp himalayan or sea salt
- 1/4 cup olive oil + to top
- 1/4 cup water to combine
Add all of the ingredients into a high-speed blender or food processor and blitz until smooth. Top with olive oil and pine nuts to serve. Serve with crackers or veg sticks.
