Banana Blender Muffins

40 minutes 10-12 Servings

Quick, easy and no mess… these muffins make the best ‘on the go’ breakfast for the whole family.

  • 3 large or 4 small ripe bananas
  • 2 large free range eggs or chia/flax eggs
  • 170g Scoop's gluten free flour
  • 60g blanched almond meal
  • 60g coconut or maple sugar
  • 1/2 cup olive oil (or oil of your choice)
  • 1 tsp vanilla essence
  • 2 1/2 tsp gf baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of fine Himalayan salt

Preheat your oven to 180C and grease and line a muffin tray or loaf tin. Blend bananas and eggs or flax/chia eggs until combined. Add all remaining ingredients and blend for approx 2 mins until nice and smooth. Pour into muffin cases or a lined tin, top with whatever you like such as coconut, crushed nuts or banana slices. Bake for 20-25 mins until a skewer comes out clean.
