Baked Porridge

This baked porridge is a gluten-free, vegan, healthy breakfast that you can prep the night before and have breakfast ready for the next few days. It is also a great one for kids of all ages! It honestly tastes like a healthy bread pudding!

420ml oat or almond milk*

2 large eggs (or flax eggs*)

120ml maple syrup*

60g butter or coconut oil*

120g stewed apples or mashed bananas

240g jumbo oats*

1 teaspoon baking powder*

1 teaspoon ground cinnamon*

1 teaspoon vanilla extract*

1.5 cups mixed berries (fresh or frozen)*

100g pumpkin seeds*

  1. Preheat the oven to 180C and grease a baking tray.
  2. Mix all the ingredients together in a large bowl.
  3. Pour into the baking pan and bake for 40 minutes until the center appears almost set.
  4. Serve with yoghurt if desired.
