Spelt Grain Salad

Nutritious and healthy wholefoods salad. Packed with healthy veg and wholegrains that are super nourishing and good for your gut.

150g Spelt Grain *
1 tsp Vegetable Bouillon *
3 Carrots
1 Onion
1 Romano pepper
1 Courgette
4 New potatoes
150g Cooked chickpeas *
12-15 Cherry tomatoes
Olive oil*
1/2 Lemon juice and zest*
1-2 Garlic cloves
Carrot tops

1. Rinse the spelt grain, add it to a pot, cover with water and add the vegetable bouillon. Bring to the boil and allow to simmer for 45-50 mins. The spelt grain will just start to show the insides but still have a firm texture.

2. Chop up all the veg and add to a roasting dish. To ensure even cooking chop the potatoes and carrots quite thinly while leaving the courgette and pepper a bit thicker. Add the cherry tomatoes whole. Cover with oil and roast for around 30 minutes.

3. Make up the carrot top gremolata if using (you can omit the carrot tops or use parsley instead but this is a great way of using them up).

Simply chop the carrot tops up very finely, add to a bowl with crushed garlic, lemon juice and zest and a good glug of olive oil. Mix well.

4. When the spelt grain and veggies are done simple mix them all together, add in the chickpeas and drizzle with the gremolata.
