Spiced Halloween Cookies (Kid friendly)

Kid friendly halloween cookies. Easy to whip up and packed with healthy ingredients. All ingredients can be found at Scoop Wholefoods.

1 cup organic chickpea flour*

¼ cup organic tapioca flour*

½ cup organic coconut sugar*

1 tbsp desiccated coconut*

1 tsp organic guar gum

½ tsp gf baking powder*

¼ tsp baking soda*

½ tsp fine himalayan salt*

1 tsp gingerbread spice*

3 tbsp melted coconut oil*

2 tbsp dairy free milk*

1 tbsp maple syrup or honey*

Preheat oven to 175C and line a baking tray with parchment paper.Mix dry ingredients well before adding wet ingredients and mixing to form a cookie dough. Divide into 8 golf ball sized balls. Place on baking tray and flatten slightly. Bake for 15 mins and allow to cool on tray.

Icing: We used coconut butter. Simply use your fingers to gently warm and mould into the shape you want before placing in the fridge to set. For the brown and green colours we used raw cacao powder and spirulina. You can use beetroot powder for pink, turmeric for yellow and activated charcoal for black.
